Royal Icing
Recipe From the book Muffin And Cupcake by Kak Ita
2 egg white
400g icing sugar
2 t lemon juice
2 t glycerine
Mix all together , whisk until smooth.
DIY Gum Paste
1 tbsp of Gum Tex
3 cups of powdered sugar
1 heaping tbsp of Glucose
4 tbsp warm water
1 cup powdered sugar
In large bowl, mix Gum-Tex into 3 cups of powdered sugar. Make a well in the center and set aside. Mix water and glucose (good luck with that sticky crap) in a glass measuring cup and blend; heat in microwave on high for about 30 seconds until mixture is clear. Pour into well of 3 cups powdered sugar and mix until well blended (mixture will be very soft) Place mixture in a plastic bag and seal tightly. let mixture rest at room temperature for 8 hrs or overnight. Knead remaining powdered sugar into gum paste when you are ready to use it. As you work with it, gum paste will whiten and soften.

500 g icing sugar
1 tablespoon gum tragacanth
1 1/2 tablespoon cold water
2 teaspoon powdered gelatine
2 teaspoon liquid glucose
1 tablespoon shortening
1 egg white
Method :
Mix the icing sugar with the gum trag, and sieve. Put in a heavy duty mixer bowl.
Sprinkle
the gelatine over the water, and wait until it becomes spongy. Then
double boil until it turns into liquid again. Add the glucose, stir
until it turns liquid too, then add in the shortening . Continue
stirring until all are melted.
Remove
from heat. Pour into the icing sugar, and mix in the egg white. Beat
until the paste becomes white and elastic. Remove the gumpaste, put in
an airtight container and let it rest for at least 12 hours before
using.
